For today's dinner I made this delicious sweet and spicy dish made of sweet potatoes, spinach and some other healthy goodnesses. Here's the recipe inspired by the Healing Foods book from Neal's Yard Covent Garden Remedies: ----- 🔸2 tbsp olive oil 🔸2 shallots, peeled and finely chopped 🔸2 tsp coriander seeds, crushed 🔸1 chilli, finely chopped 🔸2 garlic cloves, minced 🔸2 large sweet potatoes, peeled and cubed 🔸200 g spinach leaves, shredded 🔸50 g spinach stalks, finely chopped 🔸salt and black pepper to taste ----- 🔹Heat the olive oil in a saucepan with a lid. Add the shallots and coriander seeds and cook over a low heat, stirring occasionally, until the shallots have softened. 🔹Add the chilli and garlic, and cook for 1 minute. Add the sweet potato and cook over a medium heat for about 5 minutes, adding a dash of water if necessary. Then add the spinach stalks, cover with the lid, and cook for 10 minutes. 🔹When the sweet potato is almost cooked, add the spinach leaves, cover, and let them wilt for about 3 minutes.
