Healthy snack inspiration - veggie patties with tomato sauce. It's super easy - just fry the onion lightly, then add a little cubes of carrot, potato and squash and a little vegetable stock and boil together until the veg is soft (but not overcooked) and all the liquid has evaporated. Then mix in peas and some herbs if you like. I filled a round slices of puff pastry with this mixture, and baked.
