Today's lunch, super easy to make... I used regular pasta but you can use a wholewheat or spelt pasta to make it even healthier. This one is with an aubergine, green olives and garlic, topped with parmesan and fresh parsley. I love pasta for how quick and easy to make it usually is... I prefer rather mild flavours in general but once in a while it's nice to bring out something more spicy like this vegan Indian red lentil dhal with coconut milk and spinach. Anna Jones, one of my favourite authors, is a master at mixing all kinds of spices into one well balanced delicious meal. In this one she used cilantro, chilli, ginger, cumin, cinnamon, turmeric, pepper... All topped with sweet potatoes baked with cumin and fennel seeds. It's so delicious! For today's dinner I made this delicious sweet and spicy dish made of sweet potatoes, spinach and some other healthy goodnesses. Here's the recipe inspired by the Healing Foods book from Neal's Yard Covent Garden Remedies: ----- 🔸2 tbsp olive oil 🔸2 shallots, peeled and finely chopped 🔸2 tsp coriander seeds, crushed 🔸1 chilli, finely chopped 🔸2 garlic cloves, minced 🔸2 large sweet potatoes, peeled and cubed 🔸200 g spinach leaves, shredded 🔸50 g spinach stalks, finely chopped 🔸salt and black pepper to taste ----- 🔹Heat the olive oil in a saucepan with a lid. Add the shallots and coriander seeds and cook over a low heat, stirring occasionally, until the shallots have softened. 🔹Add the chilli and garlic, and cook for 1 minute. Add the sweet potato and cook over a medium heat for about 5 minutes, adding a dash of water if necessary. Then add the spinach stalks, cover with the lid, and cook for 10 minutes. 🔹When the sweet potato is almost cooked, add the spinach leaves, cover, and let them wilt for about 3 minutes.
